Day of cooking
Preheat the oven to 350 degree Celsius. Put butter, lemon and garlic into the cavity. You can also use onions and herbs if you like. Pat the outside of the chicken dry and then rub the chicken with olive oil. Place the chicken in a roaster with a rack, breast side up. Bake uncovered approximately for 20 minutes per pound or until thermometer in thickest part of the thigh is between 175-180 degrees Celsius. Alternatively you can bake the chicken uncovered in preheated oven at 180 degrees Celsius for 1 hour and 15 minutes. Remove the chicken from oven and cover with foil. Let it rest for twenty minutes, the longer the period, the juicier the chicken gets.
