Squeeze water out of thawed spinach, mix with flour, baking powder and egg yolks. Add whipped foam made out of egg whites and salt it. Thus mix together and then spread the mixture over a baking paper laying on a baking tray. Place into pre-heated oven to 200°C and bake for 10-15mins.
Meanwhile prepare the filling out of cottage cheese, grated cheese, cream and crushed garlic.
Take the baked spinach slice of a tray and place it on a new baking paper. Peel of the old baking paper, cover the slice with it and then roll it all together. When the roll cools, unroll, take off and throw away the old baking paper. Spread the filling over the unrolled slice and sprinkle with finely chopped red pepper. Roll it again, this time without baking papers.
Place the roll to the fridge to chill, then cut into slices and serve as a snack or appetizer.
